If your lot are anything like mine, the minute they come home from school they announce they’re hungry! It’s so difficult not to feed them junk food and they can seem like bottomless pits, and then when it comes to tea time they won’t eat their veggies. After attending the Coop food event with the guys from Sorted Food, I came away with a challenge to make a twist on their raisin and oatmeal cookies. Straight away I wondered if they could be made into a flapjack style bar. The recipe is really easy to make and we had all the ingredients courtesy of the co-op and our goody box.
The recipe needed no adaption, just a slightly longer cooking time as it was all in one tray rather than individual cookies. They’ve proved popular, especially when served with a glass of milk and the oats fill them up (a bit) until dinner time. Enjoy!
