Oatmeal and Raisin After School Energy Bars
  1. Preheat the oven to 175 degrees celsius and line a large baking tray with a lip or a disposable foil tray with greaseproof paper
  2. Squeeze the juice from the orange into a bowl and add the raisins. Stir to combine and leave to one side.
  3. In a large mixing bowl, add the butter, oil, sugar and honey.
  4. Crack in the egg, then beat together the ingredients until light and creamy.
  5. Spoon in the vanilla, baking powder and cinnamon, then beat in to evenly combine.
  6. Weigh in the oats.
  7. Scoop in the raisins, avoiding adding the excess orange juice, and combine the ingredients to form an evenly mixed dough.
  8. Smooth into the prepared tray and place another sheet of greaseproof paper over the top and press down with another tray to flatten.
  9. Bake for 15 minutes, then check if set, may need a further 10 minutes on the bottom shelf
  10. Allow to cool and then slice and serve!
