I’m loving making cauliflower rice at the moment, just blitz up a whole or half cauliflower in the food processor and boom, there you go. Heat it up with a few tablespoons of water in the microwave and then drain and stir fry, it’s so easy and it tastes good as well as being low carb and low GI. Here’s the recipe, you can make your own sauce or cheat like I did and use a jar. Just keep an eye on the sugar content of the sauce you’re using – you can always reduce the amount you’re using or water it down to reduce the sugar content.
