Prawn and Vegetable Stir Fry with Cauliflower Rice
  1. Blitz the cauliflower half in the food processor. If you like, you can do the whole cauliflower and freeze half or save for another day. Add 3 tbsp of water to the blitzed cauliflower in a bowl, cover and microwave for 3 minutes on full power. Drain any excess water.
  2. Finely chop the shallots (or an onion if that’s what you have) and add a tbsp of olive or vegetable oil to a medium heat. Turn the heat down and add the chopped shallots and cook gently for 5 minutes or until softened.
  3. While the onions are cooking set some water to boil and add a teaspoon of salt. Add the green beans and boil gently for 4 mintues, then drain and set aside.
  4. Add the crushed garlic to the onions and fry gently for a further minute.
  5. Add the chopped peppers and cook for another 2 minutes.
  6. Add the prawns, cauliflower and the green beans and the sauce. Stir to combine and then fry on a medium heat for 2 minutes. Serve with the chopped spring onions on top.
