As you know, I’m trying to eat Low GI foods. I put a shout out on twitter for some Low GI snack ideas. I had some responses, but some just simply weren’t suitable, I had brands with snack foods that claimed to be ‘guilt free’ which were in fact high in sugar. You can eat healthy low fat foods with no added sugar, but the actual sugar content can still be quite high. You end up feeling like you can’t eat anything! Not so. I did get one company who I was impressed with, Pip & Nut, who offer a range of nut butters using only natural ingredients (mainly just the nuts) and absolutely no palm oil – for reasons not to use palm oil, check out this article. I’m not palm oil free but I’m leaning towards it. Pip & Nut have a range of not just peanut butter, but cashew butter, almond butter and coconut almond butter to name a few. I was given Pip & Nut squeeze packs by Designed2Eat who also offer a range of other guilt free snacks. I love peanut butter on toast in the mornings, make it wholegrain and it’s lower GI.
I got inspired by the coconut almond butter, it’s made with coconut oil and has a lovely coconut flavour. I thought it would go nicely in a curry and I was right, it makes a lovely creamy sauce without the cream or coconut milk, and it’s really tasty. You can eat it with brown rice or on it’s own. Here’s the recipe, it’s easy to make too.
