This is a really tasty dressing just tossed in a simple green salad, but use it as a marinade for chicken and it takes it to another level. Use good quality aged balsamic vinegar, plus the best extra virgin olive oil you can afford, and it’s sublime. You can whip it up easily and it keeps in the fridge for up to 2 weeks. For marinating, use 2-3 tbsp of the marinade with chicken in a sandwich bag or tupperware and marinade for a minimum of 30 minutes or better still for 6 hours or overnight. Watch out for my super scrummy and easy one tray bake balsamic chicken!
